  • 8 small corn or flour tortillas, warmed
  • 1 cup shredded cheddar or Mexican blend cheese
  • Fresh cilantro leaves for garnish
  • 1 lime, cut into wedges
  • Diced tomatoes or pico de gallo
  • Sour cream or Greek yogurt
  • Optional: sliced jalapeños, avocado slices, or hot sauce

Instructions

  1. In a small mixing bowl, combine smoked paprika, ground cumin, chili powder, garlic powder, onion powder, dried oregano, salt, black pepper, and crushed red pepper flakes (if using). Mix well and set aside.
  2. Heat a large skillet over medium heat and add olive oil. Warm for about 1 minute until shimmering.
  3. Add finely chopped onion and cook for 3-4 minutes until softened and translucent. Add minced garlic and cook for another 30 seconds until fragrant.
  4. Increase heat to medium-high and add ground beef. Break it up with a spatula and cook for 6-8 minutes until browned and no pink remains.
  5. Drain excess fat if necessary, leaving about 1 tablespoon in the pan.
  6. Sprinkle the homemade seasoning blend over the beef and stir well to coat. Cook for another 2-3 minutes to let the spices bloom.
