  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 tablespoons granulated sugar
  • 4 tablespoons cold unsalted butter, diced
  • 1 3/4 cups (420 ml) buttermilk
  • 1 large egg, room temperature
  • 3/4 cup (110 grams) raisins
  • 1 tablespoon toasted caraway seeds

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper and set aside.
  2. In a large mixing bowl, whisk together the flour, baking soda, baking powder, salt, and sugar.
  3. Add the cold, diced butter to the dry ingredients. Use a pastry cutter or two knives to cut the butter into the flour until the mixture resembles coarse crumbs.
  4. Stir in the toasted caraway seeds and raisins.
  5. In a separate bowl, whisk together the buttermilk and egg until smooth.
  6. Pour the wet mixture into the dry ingredients. Gently mix with a wooden spoon or your hands until just combined. The dough should be soft but not sticky.
  7. Turn the dough onto a lightly floured surface and pat into a round loaf about 8 inches (20 cm) in diameter and 2 inches (5 cm) thick.
  8. Score a deep cross on top of the loaf with a sharp knife.
  9. Transfer the loaf to the prepared baking sheet and bake for 40-45 minutes, until the crust is golden brown and a toothpick inserted into the center comes out clean. The bread should sound hollow when tapped on the bottom.
  10. Remove from the oven and transfer to a wire rack. Let cool for at least 30 minutes before slicing.

Notes

If the crust browns too fast, tent loosely with foil halfway through baking. Soak raisins in hot water for 10 minutes if dry, then drain before adding. Use cold butter for a tender crumb. Toast caraway seeds in a dry skillet for 1-2 minutes to enhance flavor. Avoid overmixing the dough to keep it tender. Score a cross on top to help steam escape and ensure even baking.
