  • 1/2 cup sour cream
  • 1/3 cup Baileys Irish Cream
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 325°F (163°C). Line a 9×9-inch pan with parchment paper, leaving some overhang for easy removal.
  2. Make the crust: In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar. Stir until evenly coated and press firmly into the bottom of the prepared pan. Bake for 10 minutes.
  3. Prepare the filling: Soften cream cheese until smooth. Beat cream cheese and sugar on medium speed until creamy and lump-free.
  4. Add eggs one at a time, mixing well after each addition.
  5. Mix in sour cream, Baileys Irish Cream, and vanilla extract until just combined.
  6. Pour the filling over the crust and spread evenly. Tap the pan gently to release air bubbles.
  7. Bake for 35-40 minutes until edges are set but the center jiggles slightly.
  8. Cool completely on a wire rack for about 1 hour, then refrigerate for at least 4 hours or overnight.
  9. Use the parchment overhang to lift the cheesecake out of the pan. Slice into bars with a sharp knife dipped in hot water. Garnish with whipped cream or chocolate shavings if desired.
