  • 1/4 cup (60 g) Greek yogurt (or dairy-free substitute)
  • 1 tablespoon (15 ml) maple syrup or honey (optional)
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon (12 g) chia seeds (optional)
  • Pinch of salt

Instructions

  1. Mash the banana in a small bowl until smooth with a few small lumps (about 2 minutes).
  2. In a mason jar or airtight container, combine brewed espresso or strong coffee, vanilla almond milk, Greek yogurt, maple syrup or honey, and vanilla extract. Stir well until smooth (1-2 minutes).
  3. Add rolled oats and chia seeds (if using) to the mixture and stir to combine (30 seconds).
  4. Sprinkle in ground cinnamon, ground nutmeg, and a pinch of salt. Mix thoroughly (30 seconds).
  5. Fold the mashed banana into the oat mixture until evenly distributed with a slightly swirled look (1 minute).
  6. Seal the jar or container and refrigerate overnight or for at least 6 hours.
  7. In the morning, stir the oats well. If too thick, add a splash of almond milk to loosen. Garnish with chopped walnuts, sliced banana, or a dusting of cinnamon if desired (1 minute).
