  • 8 oz cream cheese, softened (225g; Philadelphia preferred)
  • ½ cup buffalo wing sauce (120ml; Frank’s RedHot recommended)
  • ½ cup ranch dressing (120ml; homemade or store-bought)
  • ½ cup blue cheese crumbles (75g; small-curd preferred)
  • 1 cup shredded cheddar cheese (115g; sharp or mild)
  • 2 tablespoons thinly sliced green onions
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Optional: celery sticks or carrot sticks for dipping
  • Optional: tortilla chips, pita chips, or crackers

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Shred the cooked chicken into bite-sized pieces, removing skin and bones if using rotisserie chicken.
  3. Soften the cream cheese in the microwave for 20-30 seconds if too firm. Combine cream cheese, ranch dressing, and buffalo wing sauce in a medium mixing bowl.
  4. Mix well with an electric mixer or spatula until smooth and creamy with no lumps.
  5. Add shredded chicken, garlic powder, salt, and pepper. Fold gently but thoroughly.
  6. Stir in shredded cheddar cheese and reserve half of the blue cheese crumbles for topping.
  7. Transfer the mixture to an 8×8-inch (20×20 cm) baking dish and smooth the surface.
  8. Sprinkle the reserved blue cheese crumbles evenly over the top along with sliced green onions.
  9. Bake for 20-25 minutes until hot, bubbly, and golden on top.
  10. Let cool for about 5 minutes before serving to thicken slightly.

Notes

Use room-temperature ingredients for smoother mixing. Avoid overbaking to keep dip creamy. Adjust buffalo sauce to taste for heat level. If dip is too runny before baking, add extra shredded cheddar or cream cheese. Leftovers can be refrigerated up to 3 days or frozen up to 3 months.
