  • 4 boneless, skinless chicken breasts (about 6 oz / 170 g each)
  • Salt and freshly ground black pepper (to taste)
  • 1 teaspoon paprika
  • 2 tablespoons olive oil (for searing)
  • 3 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream (240 ml)
  • 1/2 cup freshly grated Parmesan cheese (about 50 g)
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • Fresh parsley, chopped (for garnish)
  • 1.5 pounds baby potatoes or Yukon gold potatoes, halved (680 g)
  • 2 tablespoons olive oil (for potatoes)
  • 1 teaspoon garlic powder
  • 1 teaspoon dried rosemary or thyme
  • Salt and pepper (to taste)

Instructions

  1. Preheat oven to 425°F (220°C). Toss halved potatoes with olive oil, garlic powder, rosemary, salt, and pepper. Spread on a baking sheet and roast for 30 minutes, flipping halfway, until golden and tender.
  2. Pat chicken breasts dry and season both sides with salt, pepper, and paprika.
  3. Heat olive oil in an oven-safe skillet over medium-high heat. Sear chicken breasts 4-5 minutes per side until golden brown. Remove and set aside.
  4. Reduce heat to medium. Add butter to the skillet and melt. Stir in minced garlic and sauté for about 1 minute until fragrant.
  5. Pour in heavy cream and bring to a gentle simmer, cooking 2-3 minutes until slightly thickened.
  6. Stir in grated Parmesan cheese and crushed red pepper flakes if using. Adjust seasoning with salt and pepper.
  7. Return chicken to skillet, nestle into sauce, and spoon sauce over the top. Transfer skillet to oven and bake 10-12 minutes until chicken reaches 165°F (74°C).
  8. Remove skillet from oven and let chicken rest for 5 minutes. Garnish with chopped fresh parsley.
  9. Serve chicken with creamy garlic parmesan sauce alongside roasted potatoes.

Notes

For best roasted potatoes, choose smaller, firm potatoes with thin skins. Avoid crowding the pan when searing chicken to get a good crust. Keep heat moderate when making sauce to prevent burning garlic or curdling cream. Freshly grated Parmesan melts better than pre-grated. To crisp potatoes more, finish with a quick broil for 1-2 minutes, watching carefully.
