  • 1 whole garlic bulb, for roasting
  • 23 anchovy fillets, finely minced (or 1 tsp anchovy paste, optional)
  • 1/2 cup mayonnaise (120 ml)
  • 2 tablespoons fresh lemon juice (about 1 medium lemon)
  • 1/4 cup grated Parmesan cheese (25 g), freshly grated preferred
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce (optional)
  • 2 tablespoons extra virgin olive oil
  • Freshly ground black pepper, to taste
  • Pinch of salt, adjust to taste

Instructions

  1. Preheat oven to 400°F (200°C). Slice off the top of the garlic bulb to expose the cloves. Place on foil, drizzle with 1 teaspoon olive oil, wrap tightly, and roast for 30-35 minutes until soft and golden. Let cool.
  2. Squeeze the softened garlic cloves out of their skins into a bowl to yield about 2 tablespoons of roasted garlic paste.
  3. In a bowl, combine roasted garlic paste, mayonnaise, lemon juice, Dijon mustard, Worcestershire sauce, and minced anchovies. Whisk until smooth.
  4. Stir in grated Parmesan cheese, then slowly drizzle in olive oil while whisking to emulsify.
  5. Season with freshly ground black pepper and a pinch of salt. Taste and adjust seasoning as needed.
  6. Refrigerate the dressing for at least 30 minutes before serving to allow flavors to meld and dressing to thicken.
  7. If too thick after chilling, whisk in a teaspoon of water or more lemon juice to loosen the texture.

Notes

Use freshly grated Parmesan cheese for best flavor. For dairy-free version, substitute Parmesan with nutritional yeast and use vegan mayo. Adjust anchovy amount to taste or omit for milder flavor. Chill dressing for at least 30 minutes before serving to enhance flavor and texture. Store in airtight container in fridge up to 4 days. Stir before use.
