  • 1 medium yellow onion, finely chopped
  • 2 garlic cloves, minced
  • 4 cups vegetable broth or stock (1 liter / 4 cups)
  • 1/4 cup fresh mint leaves, chopped (about 15 g / 0.5 oz)
  • 1/2 cup crème fraîche (120 ml / 0.5 cup)
  • 2 tablespoons olive oil or unsalted butter (30 ml / 2 tbsp)
  • 1 tablespoon lemon juice (15 ml / 1 tbsp)
  • Sea salt and freshly ground black pepper to taste
  • Optional garnishes: extra mint leaves, a drizzle of crème fraîche, toasted bread

Instructions

  1. Heat 2 tablespoons of olive oil or unsalted butter in a medium to large saucepan over medium heat. Add the finely chopped yellow onion and cook, stirring occasionally, until translucent and soft, about 4-5 minutes.
  2. Add the minced garlic and cook for an additional 30 seconds until fragrant, being careful not to burn the garlic.
  3. Stir in the fresh or frozen peas, then pour in 4 cups of vegetable broth. Bring to a gentle boil, then reduce heat to low and simmer uncovered for about 15 minutes until peas are tender but still vibrant green.
  4. Remove the pot from heat. Using an immersion blender, puree the soup directly in the pot until smooth and creamy. Alternatively, carefully ladle the soup in batches into a countertop blender and blend until silky smooth.
  5. Return the blended soup to low heat. Stir in the chopped fresh mint leaves and 1/2 cup of crème fraîche, stirring gently until fully incorporated. Heat just until warmed through—do not boil to avoid curdling.
  6. Add 1 tablespoon of fresh lemon juice and season with sea salt and freshly ground black pepper to taste.
  7. Give the soup a final stir and taste. Adjust seasoning if needed. Ladle into bowls, garnish with a swirl of crème fraîche and a sprig of mint if desired, and serve immediately with crusty bread or a spring salad.

Notes

Use low-sodium vegetable broth to control salt levels. Avoid burning garlic to prevent bitterness. Add crème fraîche off heat to prevent curdling. For a chunkier texture, blend only half the soup and mix in the rest. Save some peas and mint before blending for garnish. The soup can be made a day ahead; add mint and crème fraîche just before serving. For dairy-free, substitute crème fraîche with coconut yogurt or cashew cream. Soup freezes well if crème fraîche is omitted before freezing.
