  • 34 cloves garlic, minced
  • 1/3 cup sun-dried tomatoes, chopped (oil-packed, drained)

  • 1 cup heavy cream (240 ml)
  • 1/2 cup chicken broth (120 ml)
  • 1/3 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning (blend of dried basil, oregano, thyme)
  • Salt and pepper to taste

Instructions

  1. Pat chicken breasts dry with paper towels. Season both sides with salt, pepper, and Italian seasoning. Let rest for about 5 minutes.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken breasts and cook 5-6 minutes per side until golden brown and cooked through (internal temperature 165°F/74°C). Remove chicken and set aside.
  3. Lower heat to medium. Add minced garlic to the skillet and stir for about 30 seconds until fragrant but not browned.
  4. Add chopped sun-dried tomatoes and cook for 1 minute to release flavor.
  5. Pour in chicken broth and scrape browned bits from the pan. Let broth reduce slightly for 2-3 minutes.
  6. Add heavy cream and grated Parmesan cheese. Whisk gently and simmer until sauce thickens, about 3-4 minutes.
  7. Stir in baby spinach and cook until wilted, about 1-2 minutes.
  8. Return chicken breasts to the skillet and spoon sauce over them. Warm together for 2 minutes to meld flavors.
  9. Taste sauce and adjust salt and pepper if needed. Serve hot with extra sauce spooned over chicken.
