This recipe delivers crispy, golden air fryer french fries with a perfect crunch and tender inside, made easily at home with simple ingredients and minimal oil.

Ingredients

Scale
  • 2 large russet potatoes
  • 2 tablespoons olive oil (or avocado oil)
  • 1 teaspoon salt (kosher salt recommended)
  • ½ teaspoon freshly ground black pepper
  • ¼ teaspoon garlic powder (optional)
  • ¼ teaspoon paprika (optional)
  • Cold water (for soaking)

Instructions

  1. Peel the russet potatoes if desired and cut into uniform ¼ inch (6 mm) thick strips. (10 minutes)
  2. Place the cut fries in a large bowl filled with cold water and soak for at least 30 minutes to remove excess starch. (30 minutes soak)
  3. Drain and pat the potato strips completely dry using a kitchen towel or paper towels. (5 minutes)
  4. Toss the potato strips in a dry bowl with 2 tablespoons olive oil, 1 teaspoon salt, ½ teaspoon black pepper, and optional garlic powder and paprika until evenly coated. (5 minutes)
  5. Preheat the air fryer to 380°F (193°C) for about 3 minutes. (3 minutes)
  6. Place fries in a single layer in the air fryer basket without overcrowding. Cook for 15-18 minutes, shaking or tossing halfway through, until golden brown and crispy. (15-18 minutes)
  7. Serve immediately, optionally sprinkling more salt to taste.

Notes

Soaking potatoes for at least 30 minutes is essential to remove starch and achieve crispiness. Dry potatoes thoroughly before air frying to avoid sogginess. Cook fries in batches to prevent overcrowding. Adjust temperature or cook time slightly based on your air fryer model. For extra crispiness, increase temperature by 10°F in the last few minutes but watch closely to avoid burning.
