Quick and easy crispy salmon bites made in the air fryer, paired with a creamy and spicy sriracha mayo for a perfect snack or appetizer.

  • 1 pound (450 grams) skinless, boneless salmon fillets, fresh or thawed
  • 1 cup (100 grams) panko breadcrumbs (gluten-free if needed)
  • ¼ cup (25 grams) finely grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and freshly ground black pepper to taste
  • Olive oil spray or avocado oil spray
  • For the Spicy Sriracha Mayo:
  • ½ cup (120 ml) mayonnaise
  • 1 to 2 tablespoons sriracha sauce (adjust to heat preference)
  • 1 teaspoon fresh lemon juice
  • A pinch of garlic powder (optional)

Instructions

  1. Pat the salmon fillets dry with paper towels and cut into 1-inch (2.5 cm) bite-sized cubes.
  2. In a bowl, combine panko breadcrumbs, grated Parmesan, garlic powder, smoked paprika, salt, and pepper. Mix well.
  3. Lightly spray salmon pieces with olive or avocado oil spray, then toss gently in the breadcrumb mixture until fully coated.
  4. Preheat the air fryer to 400°F (200°C) for about 3 minutes.
  5. Place the coated salmon bites in a single layer in the air fryer basket, avoiding overcrowding.
  6. Air fry at 400°F (200°C) for 8-10 minutes, shaking the basket or turning the bites halfway through cooking. Add 1-2 more minutes if extra crispiness is desired.
  7. While the salmon cooks, whisk together mayonnaise, sriracha, lemon juice, and garlic powder in a small bowl to make the spicy sriracha mayo.
  8. Remove salmon bites from the air fryer and let rest for a minute. Serve warm with the spicy sriracha mayo on the side.

Notes

Pat salmon dry before coating to ensure crispiness. Avoid overcrowding the air fryer basket to prevent soggy bites. Preheat the air fryer for best results. For better coating adhesion, dip salmon in beaten egg before breadcrumb toss if needed. Reheat leftovers in the air fryer at 350°F (175°C) for 3-5 minutes to restore crispiness.
