  • 1 can (15 oz / 425 g) canned chickpeas (garbanzo beans), drained and rinsed
  • 1 to 2 tablespoons olive oil
  • 1 to 2 tablespoons everything bagel seasoning (includes sesame seeds, poppy seeds, dried garlic, onion flakes, and salt)
  • Pinch of sea salt (optional, to taste)
  • ¼ teaspoon smoked paprika or chili powder (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Drain and rinse the chickpeas using a colander. Shake off excess moisture and pat dry thoroughly with a clean kitchen towel or paper towels for about 5 minutes.
  3. Transfer chickpeas to a mixing bowl. Add 1 to 2 tablespoons of olive oil and toss until all chickpeas are evenly coated.
  4. Add 1 to 2 tablespoons of everything bagel seasoning. Toss again to distribute seasoning evenly. Add a pinch of sea salt if your seasoning blend isn’t salted. Add ¼ teaspoon smoked paprika or chili powder if desired.
  5. Spread chickpeas on a rimmed baking sheet in a single, even layer. Use two pans if needed to avoid overcrowding.
  6. Roast in the oven for 25 to 30 minutes, stirring or shaking the pan every 10 minutes to promote even browning. Chickpeas should turn golden and crispy with a nutty aroma.
  7. Remove from oven and cool completely on a cooling rack or leave on the baking sheet. The chickpeas will crisp up more as they cool.
  8. Store cooled chickpeas in an airtight container at room temperature for up to 3 days.

Ensure chickpeas are thoroughly dried before roasting to achieve maximum crispiness. Avoid overcrowding the pan to prevent steaming. Stir or shake the pan every 10 minutes during roasting for even browning. If chickpeas soften after storage, reheat in a 350°F oven for 5 minutes to restore crunch. Air fryer can be used at 390°F for 15-20 minutes with shaking halfway through.
