A quick and easy grilled salmon recipe featuring crispy skin, fresh lemon, and herbs for a flavorful and tender meal perfect for any occasion.

Ingredients

Scale
  • Salmon fillets (skin-on, about 6 oz / 170 g each)
  • 2 tablespoons olive oil (extra virgin recommended)
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 2 tablespoons fresh herbs (dill, flat-leaf parsley, thyme leaves, finely chopped)
  • 2 cloves garlic, minced
  • Salt to taste (kosher salt recommended)
  • Freshly ground black pepper to taste
  • Optional: 1/2 teaspoon smoked paprika

Instructions

  1. Pat the salmon fillets dry with paper towels to ensure crispy skin.
  2. In a small bowl, mix olive oil, minced garlic, lemon juice, lemon zest, chopped herbs, salt, and pepper.
  3. Brush the herb-lemon mixture evenly over both sides of each fillet.
  4. Preheat the grill to medium-high heat (around 375°F / 190°C). Clean and lightly oil the grill grates to prevent sticking.
  5. Place the salmon fillets skin-side down on the grill. Cook for 6-8 minutes without flipping until the skin is golden and crispy.
  6. Carefully flip the fillets and grill the flesh side for 2-3 minutes until opaque and cooked through (internal temperature 125°F / 52°C for medium doneness).
  7. Remove the salmon from the grill and let it rest for 2 minutes to redistribute juices before serving.

Notes

Dry the salmon skin thoroughly before grilling to achieve crispiness. Oil the grill grates to prevent sticking. Resist flipping too early to allow the skin to crisp properly. Let the salmon rest after grilling to keep it moist. If flare-ups occur, move salmon to a cooler part of the grill. A grill pan or cast-iron skillet can be used if no grill is available.
