  • 1/2 cup (50g) almond flour
  • 1/4 cup (25g) Parmesan cheese, finely grated (optional)
  • 1 tsp garlic powder
  • Salt and freshly ground black pepper to taste
  • 2 tbsp olive oil
  • 4 tbsp (60g) unsalted butter, melted
  • 3 cloves fresh garlic, minced finely
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp freshly squeezed lemon juice
  • Pinch of red pepper flakes (optional)

Instructions

  1. Pat the salmon pieces dry with paper towels to remove excess moisture. Season lightly with salt and pepper. (5 minutes)
  2. In a shallow bowl, combine almond flour, Parmesan, garlic powder, salt, and pepper.
  3. Roll each piece of salmon in the almond flour mixture, pressing gently to coat all sides evenly. Set aside on a plate. (5 minutes)
  4. Warm olive oil in your skillet over medium-high heat until shimmering but not smoking.
  5. Place the salmon pieces in the hot pan without overcrowding. Cook for about 3-4 minutes on each side, turning carefully to get an even golden crust. They should feel firm to the touch but still moist inside. (8-10 minutes)
  6. In a small saucepan or microwave-safe bowl, melt the butter gently. Stir in minced garlic, chopped parsley, lemon juice, and red pepper flakes if using. Let it sit for a minute to allow the garlic to infuse. (3 minutes)
  7. Drizzle the garlic butter sauce over the crispy salmon bites right in the pan or transfer bites to a serving dish and spoon sauce over. Serve immediately.

Notes

Dry salmon thoroughly before coating to ensure crispiness. Do not overcrowd the pan to avoid steaming. Use medium-high heat for best crust. For dairy-free, substitute butter with coconut oil and omit Parmesan. For extra crispiness, broil for 1-2 minutes after cooking. Avoid flipping too often to maintain crust.
