  • 10 oz (280g) marshmallows (mini or regular)
  • 4 tablespoons (57g) unsalted butter
  • 1 cup (120g) powdered sugar
  • 1/2 cup (90g) white chocolate chips
  • 1 to 2 teaspoons matcha powder
  • 1 tablespoon fresh lime juice
  • 1 teaspoon vanilla extract

Instructions

  1. Lightly grease or line an 8×8-inch (20×20 cm) baking pan with parchment paper and set aside.
  2. Toast the Lucky Charms cereal in a large dry skillet over medium heat for 3-4 minutes, stirring frequently until lightly golden and fragrant.
  3. In a medium saucepan over low heat, melt the butter. Add marshmallows and stir constantly until completely melted and smooth, about 5 minutes. Remove from heat immediately.
  4. Pour the toasted cereal into the melted marshmallow mixture and fold gently but thoroughly until all cereal is evenly coated.
  5. Quickly transfer the mixture into the prepared pan and press evenly and firmly with a buttered spatula or wax paper. Let cool at room temperature for 30-40 minutes to set.
  6. While the bars cool, melt the white chocolate chips in a microwave-safe bowl in 20-second intervals, stirring between each until smooth.
  7. Stir in powdered sugar, matcha powder, fresh lime juice, and vanilla extract until well combined. Adjust thickness with a little milk if needed.
  8. Drizzle the green mixture over the cooled bars using a spoon or piping bag. Let the drizzle firm up for at least 20 minutes.
  9. Slice into squares or rectangles using a sharp knife, wiping the knife between slices for clean cuts.

Notes

Toast the cereal for extra crunch and flavor. Work quickly when mixing marshmallows and cereal as the mixture sets fast. Store bars in an airtight container at room temperature for up to 3 days to keep crispy. Refrigeration makes them chewy. For vegan version, substitute butter with coconut oil, marshmallows with vegan marshmallows, and white chocolate chips with dairy-free alternatives.
