  • 6 to 8 thin slices prosciutto

  • 1/3 cup (80 ml) balsamic vinegar
  • 1 tablespoon honey or brown sugar
  • 1/4 teaspoon garlic powder (optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a rimmed baking sheet with parchment paper.
  2. Rinse and trim the tough ends of the asparagus (about 1-2 inches). Pat dry thoroughly.
  3. Toss asparagus with olive oil, salt, pepper, and garlic powder (if using) in a mixing bowl until evenly coated.
  4. Gather 4 to 5 asparagus spears per bundle and wrap each bundle loosely with one slice of prosciutto.
  5. Place the bundles seam-side down on the prepared baking sheet.
  6. Roast for 12 to 15 minutes until prosciutto is crispy and asparagus is tender but still slightly crunchy. Check at 10 minutes if oven runs hot.
  7. While roasting, make the balsamic glaze: combine balsamic vinegar and honey or brown sugar in a small saucepan. Bring to a gentle boil over medium heat, then reduce heat and simmer for 8 to 10 minutes until thickened, stirring occasionally.
  8. Remove asparagus bundles from oven and let rest for 1-2 minutes.
  9. Drizzle the balsamic glaze over the bundles and serve warm.

Notes

For extra crispness, broil for the last 1-2 minutes but watch carefully to avoid burning. Dry asparagus thoroughly before wrapping to ensure crispy prosciutto. Do not overcrowd the pan to allow even crisping. Use thin prosciutto slices for best results. Leftovers can be refrigerated up to 2 days and reheated in the oven at 375°F for 8-10 minutes. Avoid microwaving to keep crispness.
