These crispy seasoned chickpeas are crunchy on the outside, tender inside, and bursting with bold flavors. Perfect as a snack, salad topper, or party treat, they come in three exciting seasoning varieties.

  • 2 cans (15 oz / 425 g each) chickpeas, drained and rinsed
  • 2 tablespoons olive oil (extra virgin preferred)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • For the Smoky BBQ Flavor:
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon chili powder
  • ¼ teaspoon cayenne pepper (optional)
  • 1 teaspoon brown sugar
  • For the Spicy Sriracha-Lime Flavor:
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 tablespoon sriracha sauce
  • 1 teaspoon lime zest
  • Juice of half a lime
  • For the Herby Parmesan Flavor:
  • 2 tablespoons grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • ½ teaspoon dried thyme
  • Freshly cracked black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Drain and rinse the canned chickpeas thoroughly under cold water using a colander. Spread them on a clean towel and pat dry to remove moisture.
  3. Optionally, rub chickpeas between your hands or with a towel to remove loose skins.
  4. Transfer chickpeas to a large mixing bowl. Add 2 tablespoons olive oil, ½ teaspoon salt, and ¼ teaspoon black pepper. Stir well to coat evenly.
  5. Divide chickpeas into three equal portions for each flavor variety.
  6. For Smoky BBQ: Add smoked paprika, garlic powder, onion powder, chili powder, cayenne pepper (optional), and brown sugar. Toss to coat.
  7. For Spicy Sriracha-Lime: Add smoked paprika, garlic powder, sriracha sauce, lime zest, and lime juice. Toss to coat.
  8. For Herby Parmesan: Add grated Parmesan, dried oregano, garlic powder, dried thyme, and freshly cracked black pepper. Toss to coat.
  9. Spread each portion in a thin, even layer on the parchment-lined baking sheet, avoiding overcrowding.
  10. Bake for 25-30 minutes, shaking or stirring every 10 minutes to ensure even cooking. Watch closely in the last 5 minutes to prevent burning.
  11. Remove from oven and let chickpeas cool on the baking sheet to crisp up further.
  12. Taste and adjust salt or seasoning if needed before serving.

Notes

Dry chickpeas thoroughly before roasting to ensure crispiness. Remove loose skins to avoid burning. Shake or stir chickpeas every 10 minutes during roasting for even browning. Store leftovers in an airtight container at room temperature for up to 3 days. Reheat in a 350°F oven for 5-7 minutes to restore crispiness. Air fryer can be used at 375°F for 15-20 minutes with shaking every 5 minutes.
