  • 6 ounces dark chocolate (70% cocoa), chopped
  • 1/2 cup heavy cream (cold)
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream (cold)
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • Optional garnishes: chocolate shavings or curls, whole strawberries dipped in chocolate, fresh mint leaves

Instructions

  1. Macerate the strawberries: In a medium bowl, combine sliced strawberries, granulated sugar, and lemon juice. Toss gently and let sit at room temperature for about 10 minutes until juices release.
  2. Make the chocolate ganache: Heat heavy cream in a small saucepan over medium heat until it just begins to simmer. Remove from heat and pour over chopped dark chocolate in a heatproof bowl. Let sit 1-2 minutes, then stir gently until smooth. Stir in vanilla extract and set aside to cool slightly but keep pourable.
  3. Whip the cream: In a chilled large mixing bowl, beat cold heavy whipping cream with powdered sugar and vanilla extract until soft peaks form. Avoid overwhipping.
  4. Prepare the cake: Cut sponge or pound cake into 1-inch cubes. Optionally, toast lightly in a 350°F oven for 5 minutes to add structure.
  5. Assemble the trifle: In a trifle bowl, layer cake cubes, half the macerated strawberries with juice, half the chocolate ganache, and half the whipped cream. Repeat layers once more and finish with a generous dollop of whipped cream on top.
  6. Decorate with optional chocolate shavings, chocolate-dipped strawberries, and fresh mint leaves.
  7. Chill the trifle covered in plastic wrap for at least 2 hours or overnight before serving.

Notes

Use high-quality dark chocolate for best ganache flavor. Chill the mixing bowl before whipping cream to achieve better volume. Let ganache cool slightly before pouring to avoid melting whipped cream. Macerate strawberries to enhance juiciness. Toast cake cubes lightly if very fresh to prevent sogginess. Can substitute coconut cream and dairy-free chocolate for vegan version. Gluten-free cake can be used for gluten sensitivity.
