  • 1 pound baby potatoes, halved or quartered (Yukon Gold or red potatoes recommended)
  • 4 tablespoons unsalted butter, cut into small pats
  • 4 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped (optional)
  • 2 tablespoons olive oil
  • Salt to taste
  • Black pepper to taste
  • 1 teaspoon onion powder
  • Pinch of red pepper flakes (optional)

Instructions

  1. Prep the Potatoes: Wash and halve the baby potatoes. Toss with olive oil, salt, pepper, and onion powder until evenly coated.
  2. Cut the Steak: Slice steak into bite-sized cubes or strips. Season lightly with salt and pepper.
  3. Make the Garlic Butter: Mix softened butter with minced garlic, chopped parsley, and red pepper flakes if using.
  4. Assemble the Foil Packets: Tear off large sheets of heavy-duty foil (about 12×12 inches). Place a layer of potatoes, then steak on top. Dot generously with garlic butter pats. Fold foil over and seal tightly, folding edges to lock in steam and juices.
  5. Cook Over Campfire or Grill: Place packets on hot coals or grill grates. Flip halfway through cooking. Cook for 20-30 minutes until potatoes are tender and steak is medium-rare.
  6. Rest and Serve: Remove packets carefully with tongs and let sit for 5 minutes before opening to allow juices to redistribute.
