  • 1.5 pounds (680g) ground beef (85% lean)
  • 1 cup (100g) breadcrumbs
  • 1/2 cup (120ml) milk
  • 2 large eggs, room temperature
  • 1/2 cup (120g) cottage cheese
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 3/4 cup (180ml) barbecue sauce
  • 1 tablespoon Worcestershire sauce
  • Salt and black pepper to taste
  • 3 medium Yukon Gold or red potatoes, cut into chunks
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large mixing bowl, combine breadcrumbs and milk. Let sit for 5 minutes until soft.
  3. Add ground beef, eggs, cottage cheese, chopped onion, minced garlic, Worcestershire sauce, dried thyme, salt, and black pepper to the breadcrumb mixture. Gently combine without overmixing.
  4. Shape the mixture into a loaf and place in a loaf pan or on a parchment-lined baking sheet.
  5. Brush barbecue sauce evenly over the top of the meatloaf.
  6. Toss potato chunks with olive oil, smoked paprika, salt, and pepper. Spread around the meatloaf or on a separate baking sheet.
  7. Bake for 50–60 minutes until the meatloaf reaches an internal temperature of 160°F (71°C) and potatoes are golden and crispy.
  8. Let the meatloaf rest for 10 minutes before slicing.
  9. Serve the meatloaf slices with crispy roasted potatoes and extra BBQ sauce if desired.

Notes

For extra crispy potatoes, broil for the last 3–5 minutes watching closely to avoid burning. Soaking breadcrumbs in milk is key to keeping the meatloaf moist. Avoid overmixing the meat to prevent a dense texture. Cottage cheese adds moisture and creaminess; Greek yogurt can be used as a substitute. Use Yukon Gold potatoes for a creamy interior and crispy exterior. Adjust cooking times if using different proteins or potato types.
