A quick and easy no-bake dessert featuring creamy cheesecake filling, a crunchy graham cracker crust, and fresh macerated strawberries. Perfect for summer gatherings and potlucks.

  • 5 tablespoons unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 8 oz cream cheese, softened (full-fat)
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream, cold
  • 1 ½ cups fresh strawberries, hulled and sliced
  • 2 tablespoons granulated sugar
  • 1 teaspoon lemon juice

Instructions

  1. In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Mix until crumbs are evenly coated and look like wet sand. Add a tiny splash of melted butter if mixture feels too dry.
  2. Spoon about 2 tablespoons of the crumb mixture into each serving cup. Press down firmly to create a compact base. Set aside.
  3. In a small bowl, toss sliced strawberries with sugar and lemon juice. Let sit for at least 10 minutes to macerate.
  4. In a large bowl, beat softened cream cheese and powdered sugar with an electric mixer until smooth and creamy (2-3 minutes). Add vanilla extract and mix to combine.
  5. In a separate chilled bowl, whip heavy cream until soft peaks form (3-4 minutes).
  6. Gently fold whipped cream into the cream cheese mixture using a spatula, keeping the filling airy and smooth.
  7. Spoon or scoop the cheesecake filling over the crust in each cup, filling about ¾ full. Top with macerated strawberries including juices.
  8. Refrigerate the cups for at least 2 hours to allow filling to firm up and flavors to meld. Overnight chilling is recommended.

Notes

Use softened cream cheese for smooth texture. Whip cream to soft peaks to avoid grainy texture. Macerate strawberries with sugar and lemon juice for best flavor. Press crust firmly but gently to hold together without baking. For gluten-free crust, substitute almond flour. For dairy-free, use coconut cream and dairy-free cream cheese.
