Easy Smoked Salmon Cucumber Bites

A quick and elegant appetizer featuring crisp cucumber rounds topped with creamy lemon-dill cream cheese and smoky smoked salmon. Perfect for last-minute gatherings or light snacks.

Ingredients

  • English cucumber, sliced into 1/4-inch rounds (seedless variety preferred)
  • Smoked salmon, thinly sliced
  • Cream cheese, softened (full-fat or dairy-free for vegan option)
  • Fresh dill, finely chopped
  • Fresh lemon zest from one lemon
  • Capers, rinsed and drained (optional)
  • Freshly ground black pepper, to taste
  • Sea salt, a pinch
  • Optional garnish: thinly sliced red onion or chives

Instructions

  1. Rinse and dry the cucumbers. Slice into 1/4-inch thick rounds. Pat dry with paper towel if slices seem watery.
  2. Spread cucumber slices on a tray and sprinkle lightly with sea salt. Let rest for 5 minutes to draw out moisture, then dab off any liquid with a paper towel.
  3. In a medium bowl, mix softened cream cheese with lemon zest, chopped dill, and a pinch of black pepper until smooth.
  4. Using a small spoon or piping bag, spread a generous dollop of the cream cheese mixture onto each cucumber slice.
  5. Tear or slice smoked salmon into bite-sized pieces and place on top of the cream cheese layer.
  6. Add a few capers to each bite and garnish with extra dill or thinly sliced red onion if desired. Finish with a light crack of black pepper.
  7. Chill the assembled bites in the refrigerator for at least 10 minutes before serving to meld flavors and keep fresh.

Notes

Lightly salting and patting dry cucumber slices prevents soggy bites. Soften cream cheese properly for smooth spreading. Assemble close to serving time for freshness or prep cream cheese and cucumber up to 4 hours ahead and add salmon just before serving. Mandoline slicer can be used for uniform cucumber slices but handle carefully.
