A quick and easy honey mustard glazed salmon recipe that delivers a moist, flaky fish with a tangy-sweet caramelized crust, perfect for weeknight dinners.

  • 4 salmon fillets (about 6 oz / 170 g each), fresh or thawed, skin-on or off
  • 3 tablespoons honey (raw or wildflower preferred)
  • 2 tablespoons Dijon mustard
  • 1 tablespoon whole grain mustard (optional but recommended)
  • 2 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon olive oil
  • Salt to taste (kosher salt recommended)
  • Freshly ground black pepper to taste
  • ½ teaspoon smoked paprika (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil for easier cleanup.
  2. Pat the salmon fillets dry with paper towels to help the glaze stick better and prevent steaming.
  3. In a medium bowl, whisk together honey, Dijon mustard, whole grain mustard (if using), minced garlic, lemon juice, olive oil, smoked paprika, salt, and freshly ground black pepper until smooth.
  4. Place the salmon fillets skin-side down on the prepared baking sheet. Brush or spoon the glaze generously over the top of each fillet, coating all exposed surfaces.
  5. Roast the salmon in the preheated oven for 12-15 minutes, depending on thickness (about 1-inch / 2.5 cm thick), until the fish flakes easily with a fork but remains moist inside.
  6. Switch the oven to broil (high) for the last 2-3 minutes to caramelize the glaze, watching closely to avoid burning.
  7. Remove from the oven and let the salmon rest for 3-5 minutes to allow juices to redistribute and flavors to meld.
  8. Serve immediately with your favorite sides such as steamed vegetables, light salad, creamy mashed potatoes, or pasta.

Notes

If glaze is too thick, add a teaspoon of water or lemon juice to loosen before brushing. For a crispy skin, broil the salmon with skin on. Avoid overcooking to keep salmon moist; aim for 125°F internal temperature. Glaze can be made a day ahead and stored in the fridge. Variations include adding cayenne pepper for heat or swapping honey with maple syrup.
