Fresh watermelon cubes are a quick, easy, and refreshing summer snack perfect for picnics, pool days, or family gatherings. This recipe highlights the natural sweetness and juiciness of ripe watermelon with optional lime, mint, and sea salt for added flavor.

  • 1 medium-sized seedless watermelon (about 5 to 7 pounds / 2.3 to 3.2 kg)
  • 1 tablespoon fresh lime juice (optional)
  • A handful of fresh mint leaves, finely chopped (optional)
  • A pinch of sea salt (optional)

Instructions

  1. Wash the watermelon under cool running water and pat dry (about 1 minute).
  2. Cut off both the top and bottom ends of the watermelon to create flat surfaces (2-3 minutes).
  3. Stand the watermelon on one flat end and cut straight down through the middle to create two halves (1 minute).
  4. Lay each half flat and slice in half again to make four quarters (1 minute).
  5. Remove the rind by sliding a knife between the red flesh and the rind for each quarter, leaving rind-free wedges (5 minutes).
  6. Cut each rind-free wedge into 1-inch wide strips, then cut crosswise into 1-inch cubes (5 minutes).
  7. If desired, gently toss the watermelon cubes with fresh lime juice, chopped mint leaves, and a pinch of sea salt (1-2 minutes).
  8. Chill the watermelon cubes in the refrigerator for at least 30 minutes before serving (optional but recommended).

Choose a watermelon that is heavy for its size with a creamy yellow spot on the rind for best sweetness and juiciness. Use a sharp knife to ensure clean cuts and avoid crushing the fruit.
