Fresh Watermelon Feta Salad with Mint

A refreshing summer salad combining juicy watermelon, salty feta, and fresh mint, dressed with lime and olive oil for a perfect balance of flavors.

Ingredients

  • 4 cups (600g) watermelon, cut into 1-inch cubes
  • 1 cup (150g) feta cheese, crumbled
  • 1/4 cup (about 15g) fresh mint leaves, torn by hand
  • 2 tablespoons extra virgin olive oil
  • Juice of 1 lime (about 2 tablespoons)
  • 1/4 teaspoon sea salt, or to taste
  • Freshly ground black pepper, optional
  • Optional: toasted pine nuts for crunch
  • Optional: thinly sliced red onions for bite

Instructions

  1. Cut the watermelon into 1-inch cubes using a sharp knife and place in a large mixing bowl.
  2. Crumble the feta cheese into small chunks about the size of a grape and add to the watermelon.
  3. Tear fresh mint leaves by hand into bite-sized pieces and scatter over the watermelon and feta.
  4. In a small bowl or jar, whisk together the olive oil, lime juice, sea salt, and black pepper if using. Taste and adjust seasoning.
  5. Pour the dressing over the watermelon mixture and gently toss with a large spoon or salad tongs to coat without breaking the watermelon cubes.
  6. If desired, sprinkle toasted pine nuts or thinly sliced red onion on top and toss gently again.
  7. Serve immediately or chill for 10-15 minutes to let flavors meld before serving.

Notes

Tear mint leaves by hand to avoid bruising and bitterness. Keep watermelon and feta chilled before mixing to maintain texture. Toss gently to avoid mushy watermelon. Drain excess juice if watermelon is very juicy to prevent sogginess.
