  • 4 cups watermelon, cubed (seedless or seeds removed)
  • 1 cup feta cheese, crumbled
  • 1/4 cup fresh mint leaves, roughly chopped
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lime juice (from 1 lime)
  • Pinch of sea salt, to taste
  • Freshly ground black pepper, a few cracks
  • Optional: 1/4 cup thinly sliced red onion or finely chopped cucumber

Instructions

  1. Cut watermelon into roughly 1-inch cubes, removing seeds and rind.
  2. Roughly chop fresh mint leaves.
  3. In a small bowl, whisk together olive oil, lime juice, sea salt, and black pepper until slightly emulsified.
  4. In a large mixing bowl, combine watermelon cubes, crumbled feta, chopped mint, and optional red onion or cucumber if using.
  5. Drizzle the dressing over the salad.
  6. Gently toss the salad with a wooden spoon or silicone spatula to coat evenly without mashing the watermelon.
  7. Taste and adjust seasoning with extra salt or lime juice if needed.
  8. Cover and refrigerate for at least 15 minutes before serving to let flavors meld.

Avoid metal bowls to prevent flavor alteration from lime juice and feta. Gently toss to avoid mashing watermelon. Prepare no more than 2 hours before serving to keep watermelon fresh. For creamier feta texture, let crumbled feta sit in olive oil for a few minutes before mixing.
