A refreshing and easy-to-make summer beverage combining juicy watermelon and fresh mint, perfect for parties and large gatherings.

  • 6 cups diced seedless fresh watermelon (about 1.5 kg)
  • 1 cup packed fresh mint leaves, gently bruised
  • 1/4 cup fresh lime juice (about 2 limes)
  • 2 to 3 tablespoons agave syrup or honey (or maple syrup)
  • 4 cups cold water
  • Ice cubes as needed for serving
  • Optional: pinch of salt
  • Optional: sparkling water (replace half the cold water for bubbles)

Instructions

  1. Cut about 6 cups (1.5 kg) of seedless watermelon into rough chunks, removing any seeds.
  2. Gently bruise 1 cup packed fresh mint leaves using fingers or the back of a spoon to release oils.
  3. In a blender, combine watermelon chunks, bruised mint, 1/4 cup fresh lime juice, and 2-3 tablespoons sweetener. Blend on high for 1-2 minutes until smooth and vibrant pink.
  4. Pour 4 cups cold water into the blender and pulse a few times to combine without losing airy texture.
  5. Taste and adjust sweetness or lime juice as needed; dilute with more cold water if too strong.
  6. Optional: Strain the mixture through a fine mesh sieve into a large pitcher for a smoother drink.
  7. Chill the agua fresca in the refrigerator for at least 30 minutes before serving.
  8. Serve over ice cubes, garnished with fresh mint sprigs or thin watermelon wedges.

Notes

Use ripe watermelon for best flavor. Gently bruise mint leaves to avoid bitterness. Adjust sweetener and lime juice to taste. Let the drink chill for at least 30 minutes to marry flavors. Optional sparkling water adds a festive fizz. Can be stored refrigerated up to 2 days.
