A quick and easy homemade snack combining creamy Greek yogurt with fresh fruits and crunchy toppings, perfect for a healthy and refreshing treat.

Ingredients

Scale
  • 2 cups (475 ml) Greek yogurt, plain unsweetened (full-fat preferred)
  • 2 tablespoons (30 ml) honey
  • 1 teaspoon (5 ml) vanilla extract
  • 1/2 cup (75 g) fresh strawberries, sliced
  • 1/2 cup (75 g) blueberries
  • 1 medium kiwi, peeled and sliced
  • 1/4 cup (35 g) raspberries
  • 1/4 cup (30 g) chopped almonds (skin-on recommended)
  • 1 tablespoon (12 g) chia seeds (optional)
  • 2 tablespoons (15 g) unsweetened shredded coconut (optional)

Instructions

  1. Line a 9×13 inch (23×33 cm) baking sheet with parchment paper or a silicone baking mat.
  2. In a mixing bowl, combine Greek yogurt, honey, and vanilla extract. Stir gently until smooth and evenly blended.
  3. Pour the yogurt mixture onto the lined baking sheet and spread evenly to about 1/4 inch (0.6 cm) thickness using a spatula or spoon.
  4. Slice strawberries, kiwi, and any larger fruits. Roughly chop almonds or nuts of choice.
  5. Sprinkle the fresh sliced fruits, raspberries, blueberries, chopped almonds, chia seeds, and shredded coconut evenly over the yogurt base. Press toppings gently into the yogurt surface.
  6. Place the baking sheet flat in the freezer and freeze for at least 4 hours or overnight until completely solid.
  7. Remove the frozen bark from the freezer and peel it off the parchment paper. Break into rustic chunks or cut into bars or squares.
  8. Serve immediately or store in an airtight container in the freezer for up to 2 weeks.

Notes

Use full-fat Greek yogurt for creamier texture and richer taste. Press toppings gently to ensure they stick but do not mix into the yogurt. Freeze flat and undisturbed for best results. Let bark sit at room temperature for 5 minutes before breaking if too hard. For dairy-free options, substitute coconut or almond yogurt and replace honey with maple syrup.
