  • 1 cup (100 grams) fresh or frozen cranberries
  • 3 tablespoons honey
  • 2 tablespoons brown sugar
  • 1 tablespoon fresh lemon juice
  • 1/4 teaspoon ground cinnamon
  • 1 teaspoon all-purpose flour (optional)
  • 1 tablespoon unsalted butter
  • Heart-shaped cookie cutter (optional)

Instructions

  1. Prep the Cranberry Topping: In a small saucepan over medium heat, combine cranberries, brown sugar, lemon juice, cinnamon, flour (if using), and butter. Stir frequently as the mixture heats until cranberries pop and the mixture thickens and becomes glossy, about 8 minutes. Add a splash of water if too thick.
  2. Shape the Cranberry Heart: Spoon the topping onto parchment paper and use a heart-shaped cookie cutter to form a heart. Refrigerate to firm up. If no cutter, spoon topping directly onto brie later.
  3. Prepare the Brie: Preheat oven to 350°F (175°C). Place brie wheel in an oven-safe dish or skillet. Optionally score a shallow ‘X’ on top rind.
  4. Bake the Brie: Bake for 12-15 minutes until cheese is soft but still holds shape.
  5. Assemble & Serve: Remove from oven, place cranberry heart on top, drizzle with 2 tablespoons honey, and serve immediately with crusty bread, crackers, or apple slices.

Notes

Do not overbake the brie to avoid it becoming a molten mess. Let brie come to room temperature before baking for even melting. Cranberry topping can be made up to 3 days ahead and refrigerated. For gluten-free, omit flour or use cornstarch. Vegan option: use vegan brie, maple syrup instead of honey, and coconut oil instead of butter.
