  • 16 oz (450 g) cream cheese, softened
  • ½ cup (115 g) unsalted butter, softened
  • 4 cups (480 g) powdered sugar, sifted
  • 1 teaspoon (5 ml) vanilla extract
  • Pinch of salt
  • Edible gold leaf sheets for decoration

Instructions

  1. Preheat oven to 350°F (175°C). Grease two 9-inch cake pans, line bottoms with parchment paper, and lightly grease the paper.
  2. In a large bowl, sift together flour, sugar, cocoa powder, baking soda, and salt. Whisk to combine evenly.
  3. In a separate bowl, whisk buttermilk, vegetable oil, eggs, vanilla extract, and emerald green gel food coloring until smooth and fully combined.
  4. Slowly add wet ingredients to dry ingredients, stirring gently with a rubber spatula until no dry streaks remain. Do not overmix.
  5. Pour batter evenly into prepared pans (about 2 ½ cups or 600 ml per pan). Tap pans to release air bubbles.
  6. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean with a few moist crumbs.
  7. Cool cakes in pans for 10 minutes, then transfer to wire racks to cool completely.
  8. Using an electric mixer, beat cream cheese and butter until smooth and fluffy. Gradually add powdered sugar on low speed. Stir in vanilla extract and salt. Adjust sweetness if needed.
  9. Place one cake layer on serving plate. Spread about ½ cup (120 g) frosting evenly over the top. Add second layer and frost top and sides smoothly.
  10. Chill cake for 15-20 minutes to set frosting.
  11. Using tweezers, carefully apply edible gold leaf to the top surface of the cake, avoiding touching with fingers.
