  • 810 pounds spiral-sliced ham, fully cooked, bone-in
  • 1/2 cup honey (preferably raw or wildflower)
  • 3/4 cup packed brown sugar (dark brown sugar preferred)
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon ground cinnamon (optional)
  • 1/4 teaspoon ground cloves (optional)
  • 1/2 cup water or apple juice
  • 2 tablespoons melted butter

Instructions

  1. Preheat your oven to 325°F (163°C). Allow the spiral ham to come to room temperature for about 30 minutes before baking.
  2. In a small bowl, combine honey, brown sugar, Dijon mustard, apple cider vinegar, ground cinnamon, and ground cloves. Whisk until smooth and set aside.
  3. Place the ham on a rack in a roasting pan. Pour water or apple juice into the bottom of the pan to keep the ham moist. Cover the ham loosely with aluminum foil.
  4. Bake the ham for about 1 hour to 1 hour 15 minutes, until the internal temperature reaches 140°F (60°C).
  5. Remove the foil and brush the glaze all over the ham, getting it into the spiral slices as best as possible. Return the ham to the oven uncovered for 15-20 minutes.
  6. Halfway through glazing time, brush the ham again with glaze and melted butter to help the crust crisp and shine.
  7. For the final 5 minutes, brush on an extra thin layer of honey alone for a sticky, glossy finish.
  8. Remove the ham from the oven and let it rest for 10-15 minutes to allow juices to redistribute and the glaze to set.
  9. Slice and serve the ham, arranging slices in a fan shape and spooning any leftover glaze or pan juices over the top.

Notes

Do not skip the resting step to keep the ham juicy and prevent the glaze from becoming sticky. Use a meat thermometer to avoid overcooking. Apply the glaze in layers for a crackly, caramelized crust. Rotate the pan if your oven has hotspots. Keep extra glaze on hand for additional brushing if needed.
