Instructions

  1. Preheat oven to 325°F (163°C). Remove spiral ham from packaging and place on a roasting rack inside a pan. Pat dry with paper towels.
  2. In a medium bowl, whisk together 1 cup honey, 1 cup packed brown sugar, 2 tablespoons Dijon mustard, 1 tablespoon apple cider vinegar, ½ teaspoon ground cinnamon, and a pinch of ground cloves until smooth and glossy.
  3. Using a basting brush, coat the entire surface of the ham with about half of the honey glaze, making sure it seeps between the spiral slices.
  4. Tent the ham loosely with foil and bake for about 1 hour and 15 minutes (or 10-12 minutes per pound). Every 20 minutes, baste with more glaze to build layers of flavor and shine. Remove foil for the last 20 minutes to caramelize the glaze.
  5. While the ham bakes, mix ¾ cup crushed pineapple (well drained), ¼ cup yellow mustard, 2 tablespoons honey, 1 tablespoon apple cider vinegar, and freshly ground black pepper to taste. Chill until ready to serve.
  6. Remove ham from oven and let rest for 10-15 minutes before slicing further or serving. Serve warm with pineapple mustard sauce on the side.
