A quick and easy shrimp scampi recipe featuring a rich garlic butter sauce, ready in just 15 minutes. Perfect for busy weeknights or impressing guests with minimal effort.

Ingredients

Scale
  • 1 pound (450g) large shrimp, peeled and deveined
  • 4 tablespoons unsalted butter, divided
  • 3 cloves garlic, minced
  • 1/4 cup (60ml) dry white wine or chicken broth
  • Juice of 1 lemon
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons fresh parsley, chopped
  • Cooked pasta or crusty bread, for serving

Instructions

  1. Rinse 1 pound (450g) of large shrimp under cold water and pat dry with paper towels. Set aside.
  2. Finely mince 3 cloves of garlic and chop 2 tablespoons of fresh parsley.
  3. Place a large skillet over medium heat and add 2 tablespoons of unsalted butter. Let it melt and get bubbly but not browned (about 1-2 minutes).
  4. Add the minced garlic to the butter and cook for about 30 seconds until fragrant, stirring constantly to avoid burning.
  5. Add the shrimp in a single layer to the pan. Sprinkle with salt and freshly ground black pepper. Cook for 2-3 minutes on one side until pink and slightly golden, then flip.
  6. Pour in 1/4 cup (60ml) dry white wine or chicken broth and squeeze the juice of one lemon over the shrimp. Add 1/4 teaspoon crushed red pepper flakes if using. Let the sauce simmer and reduce slightly, about 2 minutes.
  7. Stir in the remaining 2 tablespoons of butter and chopped parsley. Toss gently to coat the shrimp with the sauce.
  8. Serve immediately over cooked pasta or with crusty bread.

Notes

Do not overcrowd the pan to ensure even searing. Use room temperature shrimp and pat dry to avoid steaming. Cook shrimp just until opaque and pink to prevent rubbery texture. For dairy-free, substitute butter with olive oil or vegan butter. Serve over gluten-free pasta or spiralized vegetables for gluten-free meal. Fresh parsley is preferred over dried for best flavor.
