  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Prepare the zucchini noodles using a spiralizer or julienne peeler. Place noodles in a colander, sprinkle lightly with salt, and let sit for 5 minutes to draw out moisture. Pat dry with paper towels.
  2. Heat a large skillet over medium heat and melt 2 tablespoons butter with 1 tablespoon olive oil.
  3. Add minced garlic and sauté for 30 seconds to 1 minute until fragrant but not browned.
  4. Add shrimp in a single layer, season with salt, pepper, and red pepper flakes if using. Cook for about 2 minutes on one side until pink and opaque, then flip and cook another 1-2 minutes.
  5. Add fresh lemon juice and the remaining 1 tablespoon butter to the skillet. Stir gently to create a silky sauce coating the shrimp.
  6. Add the drained zucchini noodles to the pan and toss with shrimp and sauce. Cook for 1-2 minutes until noodles are warmed but still slightly crunchy.
  7. Remove from heat, sprinkle with chopped parsley and grated Parmesan cheese if desired. Serve immediately.
