  • 2 tablespoons oyster sauce

  • 1 teaspoon sugar or honey
  • 2 tablespoons vegetable or canola oil
  • Sliced green onions (for garnish)

Instructions

  1. Thinly slice the chicken into bite-sized strips, shred the carrots, slice the bell peppers, and trim the snap peas. Mince the garlic and grate the ginger.
  2. Bring a large pot of salted water to a boil. Add the noodles and cook until just tender, 4-6 minutes for fresh noodles or 8-10 minutes for dried. Drain and rinse under cold water to stop cooking and prevent sticking. Toss lightly with a teaspoon of oil.
  3. In a small bowl, whisk together soy sauce, oyster sauce, hoisin sauce (if using), sesame oil, and sugar or honey until well combined. Set aside.
  4. Heat 1 tablespoon of vegetable oil in a wok or skillet over medium-high heat until shimmering. Add the chicken in a single layer and stir-fry until cooked through and browned, about 4-5 minutes. Remove chicken and set aside.
  5. Add the remaining tablespoon of oil to the pan. Toss in garlic and ginger and stir-fry for 30 seconds until fragrant. Add carrots, bell peppers, and snap peas. Stir-fry until vegetables are tender-crisp, about 3 minutes.
  6. Return the chicken to the pan with the vegetables. Add the drained noodles and pour the sauce over everything. Toss vigorously to coat all ingredients evenly and heat through.
  7. Remove from heat and sprinkle with sliced green onions and toasted sesame seeds. Serve immediately while hot.
