Instructions

  1. Cut chicken into bite-sized pieces and pat dry with paper towels (about 5 minutes).
  2. Heat 3 tablespoons unsalted butter in a large skillet over medium heat, being careful not to brown or burn it.
  3. Add minced garlic and grated ginger to the melted butter and sauté for about 30 seconds until fragrant, stirring constantly.
  4. Add chicken pieces to the skillet, season lightly with about 1/2 teaspoon salt, and sauté for 5-6 minutes until mostly cooked through and starting to brown.
  5. Sprinkle garam masala, ground cumin, and chili powder over the chicken and stir for about 1 minute to coat evenly and release aromatic oils.
  6. Pour in tomato puree, stir well, and let simmer gently for 3 minutes to thicken the sauce slightly.
