  • 1 pound sirloin or ribeye steak, cut into 1-inch cubes
  • 4 cloves garlic, minced
  • 3 tablespoons unsalted butter, divided
  • 1 tablespoon olive oil
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon kosher salt, or to taste
  • 1/2 teaspoon freshly ground black pepper
  • Optional: pinch of red pepper flakes

Instructions

  1. Pat the steak cubes dry with paper towels. Toss the steak in a mixing bowl with salt, pepper, and a drizzle of olive oil. Let it sit for 5 minutes to absorb the seasoning.
  2. Place your skillet over medium-high heat and add 1 tablespoon of butter and the olive oil. Wait until the butter is melted and foamy but not browned, about 2 minutes.
  3. Add the steak cubes in a single layer without overcrowding the pan. Cook for about 2-3 minutes per side, turning with tongs until all sides have a golden-brown crust, about 6-8 minutes total. Cook in batches if needed.
  4. Reduce heat to medium-low. Push the steak to one side and add the remaining 2 tablespoons of butter and the minced garlic to the empty side of the pan. Stir gently for about 1 minute until fragrant, being careful not to burn the garlic.
  5. Toss the steak bites in the garlic butter until well coated. Sprinkle chopped parsley and optional red pepper flakes. Stir once more and remove from heat.
  6. Let the steak bites rest in the pan off the heat for 2 minutes to soak up the flavors before serving.

Patting the steak dry before cooking is essential for a good sear. Avoid overcrowding the pan to prevent steaming. Add garlic butter after searing to avoid burning the garlic.
