  • 1/2 cup (120 ml) sour cream
  • 1/4 cup (60 ml) mayonnaise
  • 1 cup (100 g) shredded cheddar cheese
  • 6 slices bacon, cooked crisp and chopped
  • 23 medium jalapeño peppers, deseeded and finely chopped
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder (optional)
  • 2 tablespoons fresh chives, finely chopped
  • Salt and black pepper, to taste

Instructions

  1. Cook the bacon in a skillet over medium heat until crisp, about 8–10 minutes. Drain on paper towels and chop into bite-sized pieces.
  2. Wash and dry jalapeño peppers. Slice in half lengthwise, remove seeds and membranes to reduce heat, then finely chop. For extra spice, leave some seeds in.
  3. In a medium bowl, combine softened cream cheese, sour cream, and mayonnaise. Beat with an electric mixer or whisk until smooth and fluffy, about 2–3 minutes.
  4. Stir in garlic powder, onion powder (if using), salt, and pepper to taste.
  5. Gently fold in shredded cheddar cheese, chopped bacon, and jalapeños, being careful not to overmix.
  6. Stir in fresh chives.
  7. For a cold dip, cover and refrigerate for at least 1 hour to let flavors meld. For a warm dip, transfer to an oven-safe dish and bake at 375°F (190°C) for 15-20 minutes until golden and hot throughout.
  8. Serve with chips, crackers, or fresh veggies.

Use thick-cut bacon for extra crunch. Soften cream cheese before mixing to avoid lumps. Adjust jalapeño seeds to control heat. Chill dip for at least 1 hour for best flavor or bake for a warm, bubbly option. Watch baked dip closely after 15 minutes to avoid drying out.
