Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 1.5 lbs / 680 g)
  • 1 tablespoon olive oil (for marinade)
  • Salt and freshly ground black pepper (to taste)
  • 1 cup ketchup
  • 1/4 cup apple cider vinegar
  • 1/4 cup brown sugar (packed)
  • 2 tablespoons molasses (optional but recommended)
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper
  • Salt and pepper to taste

Instructions

  1. Prepare the Barbecue Sauce: In a medium saucepan, combine ketchup, apple cider vinegar, brown sugar, molasses, Worcestershire sauce, and Dijon mustard. Whisk together over medium heat.
  2. Stir in smoked paprika, garlic powder, onion powder, and cayenne pepper. Add salt and pepper to taste.
  3. Bring the mixture to a gentle simmer, stirring occasionally. Let it simmer for 15-20 minutes until thickened slightly, then remove from heat and let cool.
  4. Marinate the Chicken: Place chicken breasts in a mixing bowl. Drizzle with olive oil, and season generously with salt and pepper. Toss to coat evenly.
  5. Cover and let marinate at room temperature for 15 minutes or up to 2 hours in the fridge for more flavor.
  6. Preheat the Grill: Heat grill to medium-high (about 375°F / 190°C). Oil the grates lightly to prevent sticking.
  7. Grill the Chicken: Place chicken on the grill and cook for 6-7 minutes per side, turning once. Use a meat thermometer to check for an internal temperature of 165°F (74°C).
  8. During the last 5 minutes of cooking, baste the chicken with the homemade barbecue sauce every 2 minutes to build a sticky glaze.
  9. Remove chicken from the grill and let rest for 5 minutes before serving.

Notes

Use a meat thermometer for perfectly cooked chicken. Marinate chicken for at least 15 minutes but no longer than 2 hours to avoid drying out. If flare-ups occur, move chicken to a cooler part of the grill. The sauce thickens as it simmers; if too thick, add a splash of water. Let chicken rest after grilling for juicy results. For extra smoky flavor, add soaked wood chips to charcoal or smoker box.
