These 5-ingredient pumpkin muffins are incredibly moist with a tender crumb and a crunchy, buttery cinnamon-sugar crust. Made with pantry staples, they are the perfect easy fall treat that feels like a hug.

Ingredients

Scale
  • 1 (15.25 oz) box yellow cake mix
  • 1 (15 oz) can pumpkin puree (100% pure, not pumpkin pie filling)
  • 2 large eggs, at room temperature
  • 1/3 cup vegetable oil
  • 1/4 cup granulated sugar
  • 1 tablespoon ground cinnamon
  • 2 tablespoons melted butter

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease generously.
  2. In a small bowl, whisk together 1/4 cup granulated sugar and 1 tablespoon ground cinnamon for the topping. Set aside. Melt 2 tablespoons butter in another small bowl.
  3. In a large mixing bowl, combine pumpkin puree, eggs, and vegetable oil. Whisk until smooth.
  4. Add the entire box of yellow cake mix to the wet ingredients. Fold with a wooden spoon or spatula until just combined. Do not overmix; a few lumps are fine.
  5. Divide batter evenly among the 12 muffin cups, filling each about 3/4 full.
  6. Brush the top of each unbaked muffin with melted butter, then generously sprinkle with the cinnamon-sugar mixture.
  7. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  8. Let muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Do not overmix the batter to avoid dense muffins. Use room temperature eggs for best incorporation. The cinnamon-sugar topping is essential for the signature crackly crust. Let muffins cool in the pan for 5 minutes before removing. For a gluten-free version, use a gluten-free yellow cake mix. Add chocolate chips, nuts, or pumpkin pie spice for variations.
