  • 2 Filet Mignon or Ribeye Steaks (about 6 oz / 170 g each)
  • 4 tablespoons (55 g) Unsalted Butter
  • 3 cloves Garlic, smashed
  • 3 sprigs Fresh Thyme
  • Sea Salt and Freshly Ground Black Pepper, to taste
  • 1 pound (450 g) Baby Potatoes
  • 1 bunch (about 1/2 pound / 225 g) Asparagus
  • 2 tablespoons (30 ml) Olive Oil
  • 1 Fresh Lemon, juiced

Instructions

  1. Preheat oven to 425°F (220°C). Rinse baby potatoes and cut larger ones in half. Toss with 1 tablespoon olive oil, sea salt, and black pepper. Spread on a baking sheet and roast for 20 minutes.
  2. Add asparagus tossed with remaining olive oil, salt, and pepper to the baking sheet. Roast everything together for another 12–15 minutes until potatoes are crispy and asparagus is tender but bright green.
  3. Pat steaks dry with paper towels. Season both sides generously with sea salt and freshly ground black pepper. Let sit at room temperature for about 10 minutes.
  4. Heat a heavy-bottomed skillet over medium-high heat until nearly smoking. Add 1 tablespoon butter and a drizzle of olive oil. Lay steaks in the pan without crowding. Sear for 3–4 minutes on the first side until a deep brown crust forms.
  5. Flip steaks once and add smashed garlic cloves and thyme sprigs to the pan.
  6. Add remaining butter to skillet. Tilt pan and baste steaks continuously with melted butter, garlic, and thyme mixture for 3–4 minutes.
  7. Use a meat thermometer to check doneness: 125°F (52°C) for medium-rare or 135°F (57°C) for medium. Remove steaks and let rest on a warm plate, tented loosely with foil, for 5 minutes.
  8. Squeeze fresh lemon juice over asparagus. Plate potatoes and asparagus alongside steaks and serve.
