These soft, naturally sweet apple cinnamon muffin bites are perfect for little hands. Made with simple ingredients and ready in 25 minutes, they’re a healthy, freezer-friendly snack that both kids and adults will love.

  • 1 medium apple (any sweet variety like Gala, Fuji, or Honeycrisp)
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg (optional but recommended)
  • 1/4 teaspoon salt
  • 1 large egg
  • 1/3 cup honey or maple syrup
  • 1/4 cup unsalted butter, melted and cooled slightly
  • 1/4 cup milk (any kind)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Position the rack in the middle of the oven. Spray your mini muffin tin generously with non-stick cooking spray.
  2. Grate the apple. Peel the apple first if you want (I do for little kids). Use the large holes of a box grater and grate the apple directly into a clean kitchen towel or a fine-mesh strainer. Squeeze the grated apple firmly over the sink to remove as much liquid as possible. Set aside.
  3. Mix the dry ingredients. In a large bowl, whisk together the all-purpose flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  4. Mix the wet ingredients. In a separate medium bowl, whisk the egg until frothy. Add the honey (or maple syrup), melted butter, milk, and vanilla extract. Whisk until combined and smooth.
  5. Combine wet and dry. Pour the wet ingredients into the dry ingredients. Add the squeezed, grated apple. Use a rubber spatula to fold everything together gently. Do not overmix. Stir just until no streaks of flour remain.
  6. Fill the muffin cups. Use a small cookie scoop or a teaspoon to divide the batter evenly among the 24 mini muffin cups. Fill each cup almost to the top.
  7. Bake. Place the muffin tin in the preheated oven and bake for 10-12 minutes. Start checking at 10 minutes. The muffin bites are done when golden brown on top and a toothpick inserted into the center comes out clean or with a few moist crumbs.
  8. Cool. Let the muffin bites cool in the pan for 5 minutes. Then, carefully transfer them to a wire rack to cool completely.

Notes

Don’t skip squeezing the grated apple to remove excess liquid, or the muffin bites will be dense and gummy. For best results, use room temperature ingredients and measure flour correctly by spooning it into the cup and leveling off. These muffin bites taste even better the next day as flavors meld.
