An easy, portable romantic dinner menu perfect for a beach picnic date night for two, featuring fresh, flavorful, and fuss-free ingredients that require no reheating.

Ingredients

Scale
  • 2 small fresh baguette or ciabatta rolls
  • 4 ounces (115 grams) prosciutto or smoked turkey, thinly sliced
  • 4 ounces (115 grams) fresh mozzarella, sliced and drained
  • 1 cup (150 grams) cherry tomatoes, rinsed and dried
  • ½ cup (75 grams) mixed olives
  • 1 cup (30 grams) arugula or baby spinach
  • ½ cup (125 grams) hummus
  • 1 cup (150 grams) fresh strawberries
  • 2 pieces dark chocolate squares
  • 1 bottle sparkling water or rosé

Instructions

  1. Prep Your Ingredients (10–15 minutes): Rinse and dry the cherry tomatoes and greens thoroughly. Slice the fresh mozzarella into ¼-inch thick rounds, then pat dry with paper towels to remove excess moisture. Slice the baguette or ciabatta rolls just before packing to keep the crust crisp.
  2. Assemble the Sandwiches (5 minutes): Layer prosciutto or smoked turkey, fresh mozzarella, arugula, and cherry tomatoes inside the bread. Spread a thin layer of hummus on the bread before adding fillings. Wrap the sandwiches tightly in parchment paper or beeswax wraps.
  3. Pack the Side Dishes (5 minutes): Fill small containers with mixed olives and extra cherry tomatoes. Include a small container of hummus for dipping, and pack fresh strawberries in a separate container lined with a paper towel to absorb moisture.
  4. Chill and Transport: Place all items carefully in your cooler bag, reserving a spot for your drink. Add an ice pack if needed to keep everything fresh until ready to eat.
  5. Serve and Enjoy: Lay out your blanket and unwrap the sandwiches. Enjoy the fresh ingredients with olives, hummus, strawberries, and dark chocolate. No reheating needed.
