  • 1 cup breadcrumbs (plain or panko)
  • 2 large eggs, room temperature
  • 1/2 cup milk (whole or 2%)
  • 1/4 cup ketchup
  • 2 tablespoons Worcestershire sauce
  • 1 small onion, finely diced
  • 3 cloves garlic, minced
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper, freshly ground
  • 1 teaspoon dried thyme
  • 1/2 cup packed brown sugar (light or dark)
  • 1/4 cup ketchup (for glaze)
  • 1 tablespoon yellow mustard
  • 1 teaspoon apple cider vinegar
  • 3 lbs russet potatoes, peeled and quartered
  • 1/2 cup unsalted butter
  • 1/2 cup heavy cream
  • 1/4 cup whole milk
  • 1 teaspoon salt (for potatoes)
  • 1/2 teaspoon black pepper (for potatoes)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×5 inch loaf pan with parchment paper, leaving overhang. Place on a baking sheet.
  2. In a large bowl, combine ground beef, breadcrumbs, eggs, milk, 1/4 cup ketchup, Worcestershire sauce, onion, garlic, 1 teaspoon salt, 1/2 teaspoon pepper, and thyme. Mix with hands until just combined.
  3. Transfer mixture to prepared loaf pan, pressing gently to remove air pockets. Smooth the top.
  4. In a small bowl, whisk together brown sugar, 1/4 cup ketchup, mustard, and apple cider vinegar until smooth. Set aside 2 tablespoons for basting.
  5. Spread remaining glaze evenly over the meatloaf.
  6. Bake for 45 minutes. Remove from oven, brush with reserved glaze, and bake another 15-20 minutes until internal temperature reaches 160°F (71°C).
  7. Let meatloaf rest in pan for 10 minutes.
  8. While meatloaf bakes, place potatoes in a large pot, cover with cold water, and add a generous pinch of salt. Bring to a boil, then simmer 15-20 minutes until fork-tender.
  9. Drain potatoes well, return to pot, and let steam for 1 minute. Mash until smooth.
  10. In a small saucepan, warm butter, heavy cream, and milk over low heat until butter melts. Pour into mashed potatoes and stir until combined. Season with 1 teaspoon salt and 1/2 teaspoon pepper.
  11. Lift meatloaf from pan using parchment. Slice into 1-inch pieces. Serve with mashed potatoes and drizzle with remaining pan glaze.

Notes

Let meatloaf rest for 10 minutes before slicing to keep it juicy. Warm dairy before adding to potatoes to avoid gluey texture. Line pan with parchment for easy removal.
