Ingredients

Scale
  • 4 boneless pork chops, about 1 inch thick
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 2 large yellow onions, thinly sliced
  • 3 cloves garlic, minced
  • 1 packet onion soup mix
  • 1 cup low-sodium beef broth
  • 1/2 cup water
  • 2 tablespoons cornstarch mixed with 2 tablespoons cold water
  • 2 tablespoons butter
  • 1 teaspoon dried thyme (optional)

Instructions

  1. Season the pork chops: Pat the pork chops dry with paper towels. Season both sides with salt, pepper, and garlic powder. Let them sit at room temperature for about 10 minutes.
  2. Sear the pork chops: Heat the olive oil in a large skillet over medium-high heat. Add the pork chops and cook for 2-3 minutes per side, until golden brown. Don’t crowd the pan — work in batches if needed.
  3. Layer the onions: Place the sliced onions in the bottom of the crockpot. Sprinkle the minced garlic over the onions.
  4. Add the pork chops: Place the seared pork chops on top of the onions.
  5. Make the gravy base: In a small bowl, whisk together the beef broth, water, and onion soup mix. Pour this mixture over the pork chops and onions. Sprinkle the dried thyme on top if using.
  6. Cook low and slow: Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours, until the pork chops are fork-tender.
  7. Thicken the gravy: About 30 minutes before serving, carefully remove the pork chops to a plate and cover with foil. In a small bowl, whisk together the cornstarch and cold water until smooth. Pour this slurry into the crockpot and stir gently. Add the butter and stir until melted. Cover and cook on HIGH for 20-30 minutes, until the gravy thickens.
  8. Return the pork chops: Add the pork chops back to the crockpot and spoon some gravy over them. Cook for another 5-10 minutes to warm through.
  9. Serve: Serve the pork chops with plenty of onion gravy spooned over the top.

Notes

For best results, use thick-cut pork chops (at least 1 inch) and cook on LOW. Don’t skip searing—it adds depth of flavor. Thicken gravy at the end with cornstarch slurry. Can be made gluten-free with gluten-free onion soup mix and broth. Leftovers keep in the fridge for up to 3 days or freeze for up to 3 months.
