This easy cinnamon apple crisp features tender, spiced apples and a crunchy, buttery oat crumble topping. It’s a comforting dessert that comes together in about 45 minutes with simple pantry ingredients.

Ingredients

Scale
  • 6 medium apples (about 2.5 lbs or 1.1 kg), peeled, cored, and sliced into 1/4-inch thick pieces
  • 3 tablespoons granulated sugar
  • 2 tablespoons light brown sugar, packed
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon cornstarch
  • Pinch of salt
  • 1 cup old-fashioned rolled oats
  • 3/4 cup all-purpose flour
  • 1/2 cup light brown sugar, packed
  • 1/4 cup granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, cold and cut into small cubes
  • Vanilla ice cream or whipped cream (optional for serving)

Instructions

  1. Preheat your oven to 350°F (175°C). Position a rack in the center of the oven. Lightly grease an 8×8-inch baking dish with butter or non-stick spray.
  2. Peel, core, and slice the apples into even 1/4-inch thick slices. Place them in a large mixing bowl.
  3. To the bowl of sliced apples, add 3 tablespoons granulated sugar, 2 tablespoons packed brown sugar, 1 tablespoon lemon juice, 1 teaspoon cinnamon, 1/4 teaspoon nutmeg, 1 tablespoon cornstarch, and a pinch of salt. Toss until evenly coated. Let sit for 5 minutes.
  4. In a medium bowl, whisk together 1 cup old-fashioned oats, 3/4 cup flour, 1/2 cup packed brown sugar, 1/4 cup granulated sugar, 1/2 teaspoon cinnamon, and 1/4 teaspoon salt. Add the cold, cubed butter. Using a pastry cutter or your fingertips, work the butter into the dry ingredients until the mixture resembles coarse crumbs with some pea-sized clumps.
  5. Spread the crumble mixture on a small baking sheet and bake for 5 minutes. Remove and let cool for a minute.
  6. Pour the seasoned apple mixture into the prepared baking dish and spread into an even layer. Sprinkle the toasted oat crumble topping evenly over the apples.
  7. Place the dish on a baking sheet. Bake for 35-40 minutes, or until the topping is deeply golden brown and the apple juices are bubbling up around the edges. If the topping is browning too quickly after 25 minutes, loosely tent with aluminum foil.
  8. Let the crisp rest on a wire rack for at least 10-15 minutes before serving.
  9. Serve warm, topped with vanilla ice cream or whipped cream if desired.

Notes

For extra crunch, toast the crumble topping for 5 minutes before assembling. Use a mix of apple varieties like Granny Smith and Honeycrisp for best texture and flavor. Let the crisp rest after baking to allow the filling to set. Store leftovers covered in the refrigerator for up to 4 days.
