This creamy, spicy buffalo chicken dip is the ultimate game day snack. Made with simple ingredients like cream cheese, hot sauce, and shredded chicken, it comes together in under 30 minutes and is always a crowd-pleaser.

Ingredients

Scale
  • 8 ounces cream cheese, softened to room temperature
  • 1/2 cup buffalo wing sauce (such as Frank’s RedHot Original)
  • 1/2 cup ranch dressing (or blue cheese dressing)
  • 1/2 cup sour cream
  • 2 cups cooked shredded chicken (about 2 medium chicken breasts or meat from 1 rotisserie chicken)
  • 1 1/2 cups shredded cheddar cheese, divided
  • 1/2 cup shredded mozzarella cheese
  • 2 tablespoons chopped green onions
  • 1 tablespoon crumbled blue cheese (optional)
  • Tortilla chips, celery sticks, carrot sticks, or baguette slices for serving

Instructions

  1. Preheat your oven to 375°F (190°C). Ensure cream cheese is at room temperature.
  2. Shred the chicken using two forks. If using rotisserie chicken, pull meat off bones and shred. If cooking your own, poach chicken breasts in simmering salted water for 12-15 minutes until cooked through, then shred while warm.
  3. In a large mixing bowl, beat the softened cream cheese with a hand mixer on medium speed until smooth and fluffy, about 1-2 minutes.
  4. Add the buffalo wing sauce, ranch dressing, and sour cream to the cream cheese. Mix on low speed until combined and smooth.
  5. Fold in the shredded chicken, 1 cup of shredded cheddar cheese, and all of the mozzarella cheese using a rubber spatula until evenly distributed.
  6. Transfer the mixture to an 8×8 or 9×9 baking dish and spread into an even layer.
  7. Sprinkle the remaining 1/2 cup of cheddar cheese over the top.
  8. Bake for 20-25 minutes, until hot and bubbly around the edges and the cheese on top is melted and starting to turn golden brown. For extra color, broil for the last 2 minutes, watching carefully.
  9. Remove from the oven and let rest for 5 minutes before serving.
  10. Garnish with chopped green onions and crumbled blue cheese if using. Serve warm with tortilla chips, celery sticks, carrot sticks, or baguette slices.

Notes

For best results, use room temperature cream cheese to avoid lumps. Shred your own cheese from a block for smoother melting. This dip can be assembled a day ahead and refrigerated; add top cheese and bake just before serving, adding about 10 minutes to baking time. Avoid using a slow cooker as it can cause the cream cheese to separate.
