  • 1/3 cup honey
  • 2 to 3 tablespoons sriracha
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons rice vinegar
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon sesame oil
  • Wooden skewers, soaked in water for 30 minutes
  • 3 to 4 green onions, sliced
  • 1 tablespoon sesame seeds, toasted
  • Lime wedges for serving

Instructions

  1. Make the marinade: In a medium bowl, whisk together honey, sriracha, soy sauce, rice vinegar, garlic, ginger, and sesame oil. Set aside about 1/4 cup of the mixture for basting later.
  2. Prep the chicken: Cut chicken thighs into 1.5-inch cubes, keeping them uniform in size.
  3. Marinate: Place chicken cubes in a resealable bag or shallow dish. Pour remaining marinade over chicken, seal, and toss to coat. Refrigerate for at least 30 minutes, preferably 2 hours (up to 12 hours).
  4. Soak skewers: If using wooden skewers, soak them in water for 30 minutes before grilling.
  5. Preheat grill: Heat grill to medium-high heat (about 400°F). Brush grates with oil to prevent sticking.
  6. Thread skewers: Thread marinated chicken onto skewers, leaving a little space between each piece.
  7. Grill skewers: Place skewers on grill. Cook for 4-5 minutes per side, turning once, until chicken is cooked through (internal temperature reaches 165°F).
  8. Baste with reserved glaze: During the last 2 minutes of grilling, brush reserved marinade onto skewers.
  9. Rest and serve: Remove skewers from grill and let rest for 2-3 minutes. Sprinkle with sliced green onions and toasted sesame seeds, and serve with lime wedges.
