This creamy no-churn salted caramel ice cream is incredibly easy to make with just five ingredients and no ice cream maker. It’s rich, velvety, and perfectly balanced with sweet caramel ribbons and a salty finish.

Ingredients

Scale
  • 2 cups (480 ml) heavy cream
  • 14 oz (397 g) can sweetened condensed milk
  • 2 teaspoons vanilla extract
  • ½ cup (120 ml) caramel sauce
  • 1 teaspoon flaky sea salt, plus more for finishing
  • Optional mix-ins: crushed pretzels, chopped toasted pecans, chocolate chunks, or peanut butter

Instructions

  1. Chill your mixing bowl and beaters in the freezer for 10-15 minutes. Ensure heavy cream is ice cold.
  2. Pour cold heavy cream into the chilled bowl. Beat on medium-high speed until soft peaks form, about 3-4 minutes.
  3. Add sweetened condensed milk and vanilla extract. Gently fold together with a rubber spatula until thick, glossy, and uniform.
  4. Gently warm caramel sauce for 10-15 seconds until pourable. Pour about two-thirds over the cream mixture and gently swirl with a knife or skewer to create ribbons.
  5. Spoon half the mixture into a 9×5 loaf pan or freezer-safe container. Drizzle half the remaining caramel sauce and sprinkle half the sea salt. Add remaining cream mixture, then top with remaining caramel and sea salt. Create a few gentle swirls on top.
  6. Press plastic wrap directly onto the surface of the ice cream. Cover with lid or foil. Freeze in the coldest part of the freezer for at least 6 hours, preferably overnight.
  7. Before serving, let ice cream sit at room temperature for 5-10 minutes to soften. Scoop with a warm ice cream scoop and sprinkle with extra flaky sea salt.

Notes

Make sure heavy cream is very cold. Do not over-whip cream. Fold gently to keep air in. Press plastic wrap directly onto surface to prevent ice crystals. For best texture, freeze overnight. Flavor improves after a day or two.
