Ingredients

Scale
  • 1 box (8.5 oz) Jiffy Corn Muffin Mix
  • 1 can (15.25 oz) whole kernel corn, drained
  • 1 can (14.75 oz) cream-style corn
  • 1 cup sour cream
  • 1/2 cup unsalted butter, melted
  • 2 large eggs, lightly beaten
  • 1 1/2 cups sharp cheddar cheese, shredded
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup sharp cheddar cheese, shredded (for topping)
  • 1 tablespoon chopped fresh parsley or chives (for garnish, optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×9 inch baking dish with butter or non-stick spray.
  2. Drain the whole kernel corn in a colander and let it sit for a minute to drain well.
  3. In a large mixing bowl, whisk the eggs lightly until the yolks and whites are combined.
  4. Add the melted butter to the eggs and whisk to combine. Make sure the butter is not hot to avoid scrambling the eggs.
  5. Stir in the sour cream until the mixture is smooth and creamy.
  6. Add the drained whole kernel corn and the cream-style corn. Stir until well combined.
  7. Sprinkle in the Jiffy Corn Muffin Mix and stir gently until just combined. Do not overmix; a few lumps are fine.
  8. Fold in 1 1/2 cups of shredded cheddar cheese. Reserve the remaining 1/2 cup for topping.
  9. Season with salt and pepper. Give one last gentle stir.
  10. Pour the batter into the prepared baking dish and spread evenly with a spatula. Sprinkle the reserved 1/2 cup cheese on top.
  11. Bake for 35-40 minutes at 350°F, until the edges are golden brown and the center is set. A toothpick inserted in the center should come out clean or with a few moist crumbs.
  12. Let the casserole cool for 5-10 minutes before serving.

Notes

For best results, shred your own cheese from a block—pre-shredded cheese contains anti-caking agents that prevent smooth melting. Let the casserole rest after baking to allow it to set properly. You can assemble the casserole up to 24 hours in advance and refrigerate; add 5-10 minutes to baking time if starting from cold. Leftovers keep in the refrigerator for up to 4 days and reheat well in the microwave or oven. The casserole can also be frozen for up to 3 months.
